I’ve been in the restaurant business in New York City for over 20 years. So you could say I’m a veteran of the industry and I’m also a passionate advocate for the art of cuisine. But, as a restaurateur I am also a small business owner and in 2009, I made the decision to make my restaurant, Commerce, New York City’s very first cashless restaurant. My decision certainly generated some interest and, most recently the New York Times, referenced me in an article about the decline of dollar bills rolling off the printing presses in Washington.
